Finding A Passion for Cooking Through Simple and Quick Recipes

After returning from a semester abroad and finally having my own kitchen, I made it my mission to truly begin cooking for myself similar to the way I grew up. I began with scouring NYT Cooking articles for recipes that I thought were doable, but again with ingredient lists with ten, fifteen or even twenty components, it was just not something I was willing to do. After talking to my dad about my issues, he recommended a Jamie Oliver cookbook called 5 Ingredients.

Cornell University is prized as being the most diverse institution in the Ivy League, with 46 percent of undergraduates identifying as minorities and 11 percent as international students. Students come from diverse racial and ethnic backgrounds and often bring customs and traditions from home. The diversity of the student body brings with it a diverse palette. Cornell Dining, consistently ranked in the top ten dining programs in the country, prides itself on being able to meet the dietary needs of their students by serving diverse cuisine and accommodating various restrictions. The menus at dining halls frequently feature foods from a variety of cultures.

Food Ethics | A Jam in March

Like everyone else right now, I’ve been partially stuck inside practicing social distancing as part of our society’s duty to mitigate the spread of COVID-19. I say “partially” because luckily one can also socially distance while spending time outdoors, and Ithaca is the perfect place. After all, why not use this opportunity to explore the beautiful area surrounding Cornell and hike some new trails? On quite a few trails during my recent hikes in various nature preserves, I’ve noticed square or rectangular indentations in the ground nearby, sometimes lined with stone. Over a hundred years ago, these earthen depressions were the cellars of houses that are now long gone.

Growing up, her mother, grandmother and aunts would always be making buns, biscuits, cookies, cakes, pies, loaves and hot dishes of all kinds. These were staples, found fresh or frozen at all times, because they make you feel at home. These are foods you make to endure stressful times, and no time in my life has been as tough as right now.

I won’t spend much time remarking on how unprecedented today’s circumstances are or emphasizing how important it is to self-isolate. These ideas have received their share of attention already. My parents, with their arduous Soviet mentalities, taught that in times of desperation and confusion, focus on those aspects of your life which are under your control. Instead of staring at the number of confirmed cases on worldometer.com, clean your room. Instead of worrying about the thousands of elders at risk, call your grandmother.

Countryside Amish Market

Teddy Matel ‘22 and I coasted down Cornell’s hills into Ithaca, the sun warming our backs and the wind chilling our faces. When we reached town, Teddy led us to Black Diamond Trail, an 8.4 mile stretch of stone dust, converted from an old railroad bed, that passes through a mix of woodlands and fields along the western shore of Cayuga Lake. The trail ended at Taughannock Falls State Park, a 750-acre park northwest of Ithaca near Trumansburg, and we jetted onto Route 96, the adjacent road. By this time, the sun was at its peak in the sky. After five miles down the shoulder of  Route 96, Teddy and I darted left, and we quickly found ourselves biking on a pebble road.
